VEGAN CHOCOLATE MOUSSE

Ingredients:

350g vegan chocolate (70% min)

480ml aquafaba

40g maple syrup

10ml coconut milk

3g vanilla paste

pinch chilli flakes

pinch salt

Optional:

fresh mixed berries

cacao nibs

 

Method:

Melt chocolate gently over bain marie, add a splash of coconut milk.

Whisk aquafaba to soft peaks, slowly add the sugar and vanilla.

Stop once the aquafaba has formed stiff peaks.

Gently fold the melted chocolate into the vegan meringue with chilli flakes and salt.

Set in dish and refrigerate.

Top with fresh berries and additional crunch.
